In Sport mode (or Strada mode, I believe?), you can choose manual or automatic mode (by toggling the "M" button on the centre console).
You can also do it from the steering wheel by just putting in Corsa, then immediately moving to whatever mode you want from there and it will stay in manual even if you are not moving.
